What a special time we're in.
Full of delicious mulled anticipation, smell of lebkuchen, stockings filled with love…
Clear & frosty December mornings are probably my absolute favorite time of the year. When the room temperature gets a little colder and you don't want to peek your schnoot out of the blanket.
Cozy slippers don't get changed and cashmere knitwear becomes our uniform.
The cozy evenings by the fire as snowflakes make their way to our front door to greet us yet again as the new day begins.
Countdown to Christmas Eve… and then the New Year's…
Wood cracking in hearth, soft blankets warm up frozen palms, merry melodies tirelessly deliver the festive atmosphere and people seem a tiny bit more joyful.
And even though Christmas is already behind, there's so much to love and look forward to during this time!
Homemade cookies are just equivalent to saying “I love you dearly”, in my opinion.
Today I want to share a truly mouth-watering recipe that will be perfect for this time of the year. I didn't come up with it myself, although I wish I did because it's PERFECT!
It's full of festive spices, totally beginner-friendly and absolutely gorgeous, both in looks and flavour!
You won't need a huge amount of ingredients (mainly spices) nor time but the result will make these your favourite cookies this season, I promise!
Sift the flour in a large bowl, add baking powder, spices, sugar and salt. Add roughly grated butter and mix everything up with your hands until the batter forms in large chunks.
Add the egg and softly mix everything together until the batter is smooth. The less you'll mix, the more fluffy your cookies will turn out.
Wrap your dough in cling film and put it in a cool place for 1 hour (I just put it in my pantry).
Preheat the oven to 200°C. Roll out the dough 5mm thick, create the shape of your cookies (I make mine round), put them on a sheet of parchment paper and bake for around 12 minutes until the cookies are golden brown.
Take out of the oven, leave them to cool for 3 to 5 minutes. You can then transfer them to the metal rack so that they can cool off completely.
These would honestly be the cutest cookies for gifting when going to visit someone during this time. Just put them in a glass jar or stack about 10 in one tower, wrap a ribbon around and voila!
These can also be served after dinner as dessert. A very thoughtful and totally festive detail to your already excellent hosting service. Serve with tea, coffee or milk, as your cookie heart desires.
Or indulge in some yourself whilst cuddling up on the sofa! It's also a fun activity to do with your family or friends.
